Happy Easter!!
So, I have been a very busy girl!! This past weekend I had two paying orders and a request for a carrot cake for Easter Dinner. Whew!
Thursday night I made Easter nest treats and carrot cupcakes for my co-workers. They all turned out great! The Easter nests are pretty much just a creative take on rice krispie treats and are just as tasty if not more so. They were a huge hit and I packaged them in cute Easter themed Chinese take-out boxes I picked up at Michael's.
The carrot cupcakes turned out very nice as well. The cake was extremely moist and flavorful. Even co-workers who weren't necessarily carrot cake lovers, enjoyed the cupcakes. I frosted them with a cream cheese/heavy whipping cream creation, which actually made the frosting less sweet, very creamy and light! It was hailed as being very delightful! To top the cupcakes I grated carrots lengthwise and then soaked them in a simple syrup to soften them. Then I molded them in a curled design, sprinkled them with sugar and let them dry overnight and they were the perfect topping and extremely tasty!

So.. Ok.. my first order of the week came from my good friend/maid of honor. She placed an order for 1 dozen shamrock (chocolate cupcake w/ Bailey's Irish cream cheese Frosting) and 1 dozen Vanilla (Bourbon Vanilla Cake with Vanilla Buttercream). They both turned out great! I decorated the shamrock cupcakes, by using green food coloring in the cream cheese frosting, Green edible sparkles, and a little "kiss me , I am Irish" shamrock flag. Sooo cute!! The vanilla cupcakes were so much fun to decorate too, I heaped them with vanilla buttercream and then large colored sprinkles, and a maraschino cherry to top it off. It looked delicious, and made me feel like a kid again!

1 dozen strawberry shortcake cupcakes...these are my favorite. They are the epitome of summertime! Fresh Vanilla cake filled with fresh strawberry whipped cream, topped with more whipped cream and then a fresh strawberry slice. These worked out great ..the only issue with these is because they are frosted and filled with whipped cream they have to either be eaten right away, or chilled, which can sometimes dry out the cupcake. In this cause neither was an issue.
Easter Sunday Dinner: Carrot Cake
OMG.. Now I try not to get a big head about my baking, but I was overly impressed by my carrot cake. The cake itself came out perfect!! It popped out of the pan perfectly thanks to my non-stick baking spray...and then they were extremely moist and packed with fresh grated carrots and toasted pecans. I put a sheet of wax paper between each cake and covered it for the night. Sunday morning...I made my cream cheese frosting sans whipping cream because I didn't want to have to worry about the frosting losing its shape. I did a crumb coating. popped it in the fridge for an hour, then took it out. finished frosting the cake, then I used a pastry triangle, to make a wonderful design on the side of the cake. Then I topped the cake with toasted pecans, and finished it by piping Swiss dots around the top and bottom of the cake...and There you have it !! A PERFECT EASTER CARROT CAKE!!!!
OK...well wow..that was a lot of stuff huh?? and I am still not done, I had some left over chocolate cupcakes, so I will be frosting those with vanilla buttercream, chocolate jimmies and a cherry!! YUM!!!
